Tropical Pancakes

This will be your new go to breakfast recipe that your little ones will love. They're the perfect combination of fluffy and moist and much healthier than your traditional pancake - perfect for those fussy eaters.


We’ve topped ours with maple syrup which is completely optional for a special treat but

remember no honey for babies under the age of 1.





Serves 2



Tropical Pancakes


Ingredients


170 self raising flour

60ml milk

15g butter

80g fresh mango

1 ripe banana

1 tsp baking powder

20g desiccated coconut

A little coconut oil or butter for frying



Method


Add all of the ingredients to a blender or food processor and mix until everything is just blended (don’t over mix - you want the texture to be slightly lumpy still)


Heat a frying pan over a medium heat and add the coconut oil or a little butter

Once hot, pour the mixture into the pan making small - medium sized pancakes (we have done 4 at a time so the pan isn’t over crowded)


Fry for around 1 1/2 minutes on each side


Leave to cool for a few minutes before serving
