Suitable from 6+ months and a family favourite
These fritters are cheesy, healthy, perfect for BLW and the whole family. They’re also absolutely delicious - bonus!
I kept this recipe gluten free by using cornflour, but it can be substituted for regular plain flour.
I have used spring greens in this recipe, however if you don't have any to hand it can be substituted with spinach or kale.
Makes 12 Fritters
Spring Chicken Fritters
Ingredients
400g diced chicken breast
2 eggs
65g cheddar cheese grated
1 large carrot grated
Large handful of chopped spring greens
40g cornflour
Method
Whisk together the eggs and flour then mix in the chicken, spring greens, grated carrot and cheese
Heat a little oil in a large non stick pan over a medium-high heat
Spoon the mixture into 6 patties and fry for around 4 minutes on each side until crisp, golden and cooked through, then repeat the process
Store in the fridge for up to 3 days
Can you sub diced chicken for ground chicken?
