Serves 2 - if you're making this for more simply double the quantities
Salmon and Broccoli Alfredo
Ingredients
1 salmon fillet
50g broccoli florets
50g mushrooms sliced
1 garlic clove chopped
70g penne pasta
20ml double cream
15g grated cheddar cheese
1tbsp vegetable oil
Method
Heat the oil in a frying pan and once hot place the salmon skin side down for 3 minutes then flip for a further 2 minutes
Meanwhile cook your pasta according to pack instructions, once almost cooked add the broccoli for a couple of minutes then drain
Remove the now cooked salmon from the pan and place to one side, add the mushrooms to the same pan and soften and add the garlic, cook for another minute or so
Meanwhile flake the salmon and remove the skin
Add the cream to the pan and allow to simmer slightly, then add the cheese and stir
Add the pasta, broccoli and salmon and mix together
Serve and allow to cool a little before giving to infants
