These salmon and spinach fritters are the perfect healthy meal choice for babies, toddlers and the whole family. They are really easy to make and are also great for a lunch box filler.
We love fritters in this house, in fact one of our favourite recipes of all time are these Spring Chicken Fritters, so I decided to make a salmon variation as well - they are just as delicious and the spinach works extremely well in them - they are now a firm fixture in the kids meal plans.
They are filled with healthy fats, and high in protein so they will keep the whole family going for hours!

Although I added Parmesan to my salmon and spinach fritters recipe, you can easily make these fritters dairy free by leaving out the cheese. These fritters are also gluten free as I use cornflour, but this can be substituted with all purpose flour.
To make these salmon and spinach fritters you only need a handful of ingredients:
Salmon
Spinach
Cornflour
Eggs
Parmesan (optional)
These fritters couldn't be easier to make, all you have to do is flake the pre-cooked salmon and mix it with cornflour, eggs, Parmesan and spinach and fry them in a little olive oil and thats it! Leave to cool before serving, and you can keep them in the fridge for up to three days.
The fritters are perfect for weaning and BLW (baby led weaning).. If you want to be slightly more prepared for the week ahead, batch cook these and leave them in the fridge in an airtight container, or freeze them for a longer period of time and just take one out as and when you need them.
You can eat these salmon and spinach fritters hot or cold - to heat them up I usually just pop them in the air fryer for a couple of minutes then allow to cool slightly before giving them to the kids.
I cook these salmon and spinach fritters in a little olive oil, but you can use any cooking oil or even butter (use unsalted if baby is under 12 months).
Makes 7 Fritters
Salmon and Spinach Fritters
Ingredients
1 cooked salmon fillet
40g cornflour
2 handfuls of chopped spinach
60g Parmesan cheese (optional)
2 eggs
A little olive oil for frying
Method
Use two forks to flake the salmon
In a large mixing bowl whisk the eggs together, then add the cornflour and Parmesan before whisking again until everything has combined
Add the salmon and the spinach using a large spoon to mix well together
Heat the olive oil in a large frying pan use a spoon to add the mixture to the pan making around 7 circular fritters
Fry for around 2-3 minutes on each side until they turn golden
Allow to cool before serving
Store in the fridge for up to 3 days or freeze
