Courgette and Sun-dried Tomato Frittata

An afternoon snack which is perfect finger food for weaning on the go. It's also packed with hidden veg - they will never know!


Feel free to experiment with other cheeses with this recipe, Gouda and Red Leicester would also work particularly well.

Courgette and Sun-dried Tomato Frittata

  • 1 courgette grated

  • 30g sun-dried tomatoes

  • 3 eggs

  • 50g Cheddar cheese

  • 1 tbsp plain flour

  • 1/2 tsp mixed herbs

  • 1/2 tbsp vegetable oil



Method

Whisk together the eggs, cheese, flour and mixed herbs


Dice the sun-dried tomatoes and squeeze any excess liquid out of the courgette using a muslin cloth or clean tea towel


Transfer to a medium sized baking dish lined with parchment paper and add the mixture


Cook in a preheated oven for 25 minutes at 190c

Leave to cool before removing the frittata from the baking dish slicing it into easy to eat fingers
