Pulled Chicken Quesadillas

Suitable from 6+ months and perfect for a family meal


Who doesn't love Quesadillas?! These pulled chicken quesadillas are gently spiced so that they are suitable for the whole family.


Babies can have various herbs and gentle spices from 6+ months, I add cumin, paprika and garlic to these quesadillas but as your child gets older you can gradually increase the heat of the spices.


Mexican food is one of my all time favourite cuisines and these pulled chicken quesadillas are so easy to make, I also love that they are a hit with the whole family so I can feed everyone the same meal and save myself a lot of effort (the perks of baby led weaning!).


Although I used pulled chicken in my quesadillas, you can use any cooked chicken, or substitute with beef, pork, or leave the meat out all together.


This is also a great recipe for using up any leftovers, simply fry any vegetables and add some chopped meat with the seasoning and you have a delicious quesadilla filling ready to go!

Serves 3-4


Pulled Chicken Quesadillas


Ingredients


200g leftover chicken (or 1 large cooked chicken breast)

1 red bell pepper finely chopped

1 diced red onion

50g mushrooms finely chopped

1 small bunch of coriander (cilantro)

1 tsp garlic powder

1 tsp paprika

1 tsp cumin

1 tbsp olive oil

3-4 tortilla wraps

50g grated cheddar cheese





Method


Use two forks to pull the chicken


Heat the oil in a frying pan over a medium high heat and add the vegetables. Fry fro a few minutes util the start to soften then add the chicken, and the spices. Stir and allow to cook for a few more minutes


Add around 3 large spoonfuls to one side of a tortilla wrap, then sprinkle the cheese on top and fold the other half of the wrap over the top


Heat another large frying pan over a medium - high heat and carefully place the quesadilla inside the pan. Dry fry for around 3 minutes before flipping and frying the other side. Remove from the pan and repeat the process


Cut into triangles or soldiers if serving to a young baby and allow to cool before serving
