Macaroni with Bacon and Crème Fraîche

Updated: Sep 26, 2022

Suitable from 1+ months (can be adapted for 6+ months) and a family favourite

There’s something super comforting about a big bowl of pasta and bacon, this meal is kept light by using crème fraîche and lean bacon. It also has veggies snuck in, the fussy eaters will never know

Tip: as bacon has a tendency to be quite salty, if substitute it for oven baked ham or chicken if your baby is under the age 1

Serves a family of 4

Macaroni with Bacon and Crème Fraîche

Ingredients

  • 220g dried macaroni pasta

  • 4 thick cut bacon medallions

  • 1 bag of baby spinach

  • 70g chestnut mushrooms

  • 150ml Crème Fraîche

  • 1 low sodium chicken stock cube

  • 3 garlic cloves crushed

  • 1/2 tbsp vegetable oil

  • Fresh parmesan to serve (optional)

Method

Cook the pasta according to packet instructions, drain and set aside and reserve 2tbsp of the cooking water

Dice the bacon and heat the oil in a large pan. Fry the bacon until it starts to crisp and then add the mushrooms and garlic

Meanwhile, mix the chicken stock cube with the reserved pasta water

After a few minutes and the mushrooms have started to soften, add the chicken stock

At this point add the spinach and reduce to a low heat

Once the spinach has wilted add the crème fraîche, mixing everything together

Add the pasta to the pan and toss it in with the sauce.

Serve immediately with fresh parmesan if desired
