I say that these are breakfast muffins but they have been a great lunch option for us on the go at many zoo trips!
Bacon and cheese is a match made in heaven in my opinion, buy save this recipe for once baby has turned 1 as bacon is high in sodium, and then treat it as a treat for your little ones.

Makes 6 portions
Bacon Breakfast Muffins
Ingredients
4 rashers of back bacon
100g cheddar cheese grated
200g plain flour
1 tbsp baking powder
2 large handfuls of chopped baby spinach
60g unsalted butter (melted)
2 eggs whisked
170ml whole milk
1 bunch of chopped parsley

Fry or grill the bacon until it is crispy then chop into small pieces
In the same pan wilt the spinach for a few minutes stirring consistently and put to one side
In a large mixing bowl sift the flour and combine with the baking powder, then stir in the cheese (reserving around 10g), the parsley, the bacon and spinach
Next mix in the melted butter, the milk and eggs - it should be a lumpy mixture
Line a muffin tin with muffin cases and fill them with the mixture, and top with the reserved cheese
Cook in a preheated oven for 25 minutes at 180c
Leave to cool before serving
