These delicious little savoury muffins are perfect for a grab and go quick lunch, breakfast or snack!
You can put whatever meat or veg you fancy in these muffins, whatever needs using your in the fridge. This recipe was made using chorizo, just keep in mind that chorizo has quite a high salt content so if you’re giving these to your baby only use a little. The good news is a little bit of chorizo packs a lot a flavour.

Makes 12 small muffins
Hidden Veg and Chorizo Muffins
Ingredients
1 yellow or red pepper diced
4-5 florets of broccoli finely chopped
2 spring onions finely sliced
40g cheddar grated
6 eggs
1/2 tsp garlic powder
1/2 tsp smoked paprika
30g diced chorizo
1tbsp vegetable oil
Method
Preheat the oven to 220c
Heat the oil in a frying pan over a medium heat and fry the broccoli, onions, pepper and chorizo until the vegetables begin to soften, then add the garlic granules and smoked paprika and fry for another minute or so mixing everything together, then leave to cook for a few minutes
In a large mixing bowl, whisk the eggs together with the cheese, then add the contents of the frying pan stirring everything together
Spoon the mixture until a silicon muffin tray (the one is use makes 12 small muffins)
Bake the muffins for 15 minutes
Leave to cool before serving, or keep in an air tight container in the fridge for up to 3 days
