Cornflake Chicken Nuggets

Suitable from 12+ months, great for kids and the whole family


No breadcrumbs? No problem! Cornflakes make a delicious crispy alternative to breadcrumbs when it comes to chicken nuggets - and kids love them!


To make these cornflake chicken nuggets all you need is a handful of cornflakes, a chicken breast, some flour and an egg. Just 4 ingredients for a delicious family meal.


I cook mine in an air fryer, and they come out so delicious and crispy, but still moist on the inside. This is the air fryer I use, it's the Dual Basket Air Fryer from Lakeland (affiliate link) so I can cook my chips at the same time just in the separate basket.





Although these cornflake chicken nuggets make great finger foods which is perfect for BLW (baby led weaning) it's recommended to wait until they are 1 year old due to cornflakes having added sugar and sodium. However, if you did want to offer an alternative to babies from 6+ months substitute the cornflakes with crushed Weetabix.


The first time I made these, my son thought I had gone mad. Truthfully, I had no idea how they would turn out, but I couldn't believe how nice they were, and even my son who is a fussy eater cleared his plate! I think he loved the novelty of having cereal for his dinner.





To make these cornflake chicken nuggets all you have to do is grab a handful of cornflakes and pop them in a resealable bag (such as a sandwich bag) and crush them with a rolling pin - it's actually strangely therapeutic.


After crushing the cornflakes, dice 1 or two chicken breasts, roll the diced chicken in some flour, add a whisked egg followed by the crushed cornflakes before popping them in the air fryer at 200c (390f) for 15 minutes.


You can of course oven bake them instead, just follow the same method but oven bake at 200c (390f) for 15 minutes.




I serve these cornflake chicken nuggets with homemade sweet potato fries and peas, a perfect healthy kids dinner which the whole family can enjoy! I love making one meal for the whole family, it makes my life so much easier.

Cornflake Chicken Nuggets


Ingredients


Two handfuls of cornflakes

Seasoning (I use 1 tsp paprika, 1 tsp garlic powder and 1tsp oregano)

2 tbsp plain flour

1 whisked egg

2 chicken breasts diced




Method


Preheat air fryer, or oven to 200c (390f)


Add the cornflakes and seasoning to a resealable bag and crush them with a rolling pin, then empty the contents onto a bowl


Roll the diced chicken breast pieces one at a time first in the flour, then egg, and finally the cornflake mixture then place to one side on a separate plate


Add the cornflake chicken nuggets to the air fryer and air fry for 12-15 minutes - cut through one of the nuggets to make sure it's cooked through


Allow to cool before serving, store in the fridge for 3 days or freeze for 3 months
