Cod and Chorizo Paella

Suitable from 12+ months and a family favourite


This one is for children over the age of 12 months as it is made with chorizo which contains salt. The good news is a little chorizo goes a long way so you don’t need much of it but it gives you the best flavour. You can substitute the cod with any fish that you fancy, prawns are also delicious in this dish.

Cod and Chorizo Paella


Ingredients

  • 2 cod fillets

  • 200g diced chorizo

  • 1 tbsp extra virgin olive oil

  • 200g paella or risotto rice

  • 1 medium sized onion diced

  • 4 garlic cloves crushed

  • 1 tin of chopped tomatoes

  • 1 bell pepper diced

  • 50g frozen peas

  • 50g frozen sweetcorn

  • 700ml chicken stock

  • 2 tsp paprika

  • 1 tsp oregano

  • 1/2 a lemon juice




Method


In a large pan, heat 1 tbsp extra virgin olive oil and sauté the onions until translucent

Add the rice and toast for a minute before adding the tinned tomatoes and the chicken stock

Bring the pan to a simmer and add the garlic, oregano and paprika


Meanwhile, line a baking tray with foil, grease it with a little oil and place the cod fillets on top then cook in the oven for 20 minutes

Once around half the liquid is absorbed, add the chorizo and chopped pepper to the pan


Once the stock is almost all absorbed add the peas and the sweetcorn and simmer for a further 5 minutes stirring regularly

Flake the cod fillets and stir into the paella, then squeeze in the juice of 1/2 a lemon just before serving
