These protein packed little muffins are full of healthy fats and goodness - they're also great for on the go and they're really easy for your baby to hold and feed themselves. Not to mention delicious!
Courgette (or Zucchini if you're in America) is such a versatile ingredient, especially when it comes to weaning and hidden veg recipes as you can simply grate it and slip it into just about anything!
These savoury muffins are an absolute hit in our house, not only with Eloise (8 months old at time of writing) but also my toddler Maxie. I may have indulged in one or two as well...
You can also freeze the cheesy courgette savoury muffins, so you have a breakfast, lunch or snack on demand!
You can of course use any cheese in this recipe, I just used cheddar as we always have some in the fridge and it's such a versatile ingredient when I'm cooking for the kids.
Cheesy Courgette Savoury Muffins
Makes 12 savoury muffins
Ingredients
170g plain flour
120ml whole milk
2 eggs
1 tsp baking powder
85g cheddar cheese
1 tsp garlic granules
1 tsp mixed herbs
1 courgette (zucchini) grated
Method
Preheat oven to 200c
In a large mixing bowl whisk together the flour, milk, eggs and baking powder until it becomes a smooth batter
Add the courgette (zucchini), cheese, garlic granules and mixed herbs and mix again until everything is combined
Spoon the batter into a silicon muffin tray (you can obviously use any muffin tray but they easily pop out if the silicon tray when cooked!)
Bake in the oven for 20 minutes
Leave to cool before serving
