Oh I do love making bliss balls for the kids, they're great for babies, toddlers and big kids and will give them tonnes of energy all morning!
Not only are these carrot cake bliss balls a great breakfast recipe that can be prepared a day or two earlier, they're also a handy healthy snack for when you're on the go to keep in the fridge.
You can make these carrot cake bliss balls 3 days ahead and keep them in an air tight container in the fridge, or freeze for up to 3 months for the best quality. It's a great recipe for batch cooking, especially for babies who don't tend to need a lot of food so you can take one out of the freezer as and when they're needed.
I often get asked if the oats need cooking before making bliss balls, and the answer is no - but buy rolled oats as they have already been partially cooked and they soak in the wet ingredients (it's the same concept as overnight oats!). The chia seeds are also soaked in the wet ingredients once the bliss balls are formed.
These bliss balls are free of all refined sugars and only contain a small amount of added natural sugar by using a table spoon of maple syrup. This helps bind the recipe along with the peanut butter and chia seeds. However, you can opt to leave it out if you wish.
If your baby is over the age of one then you can also substitute the maple syrup for honey, but please remember no honey for babies over the age of 1 (there is a small buts serious risk of infant botulism).
I use chopped raisins in this recipe as whole raisins are a choking risk but you can keep them whole if you are making them for babies over the age of 1.

Carrot Cake Bliss Balls
Ingredients
120g rolled oats
1 carrot peeled and grated
30g chopped raisins
1 tbsp chia seeds
2 tbsp peanut butter
250ml milk of your choice
1/2 tsp vanilla extract
1 tbsp maple syrup (optional)
A pinch of cinnamon powder
50g desiccated coconut
Method
In a large mixing bowl add all of the ingredients apart from the desiccated coconut and mix well until everything is combined
Add the desiccated coconut to a plate then use your hands to make the mixture into small balls, then roll in the desiccated coconut and place on a separate plate (repeat this process until all of the mixture is gone, it should make around 12 -14 bliss balls)
Leave in the fridge overnight (or for at least 5 hours)
Keep in the fridge in an air tight container for up to 3 days , or freeze for up to three months
Is there an error with the oats to milk ratio here? My mixture is just too wet to make in to any shape!
